CAULIFLOWER MASHED POTATOES
Ingredients:
1 head cauliflower
1 Tbsp margarine
¼ c skim milk or less
Sal t and pepper to taste
Garlic to taste
Directions: Boil, steam or microwave cauliflower until soft. Steaming is best—takes about 20 minutes. Drain water and place cauliflower in a food processor. Add margarine, small amount milk and salt and pepper. Process until the consistency of mashed potatoes—maybe 3 minutes. Add garlic at this point, if desired and serve with additional butter.
