Cauliflower #2

SIMPLE CAULIFLOWER RECIPE
Ingredients:
1 large head cauliflower
4 Tbsp olive oil
Sea salt
2 cloves garlic, minced
2 small bunches chopped chives
Zest of 2 lemons
Parmesan Cheese to taste

Directions: Chop the cauliflower into florets the size of a grape. Rinse under running water and set aside to drain. Heat the olive oil and salt in a large skillet over medium-high heat. When hot, add the cauliflower and stir until the florets are coated. Wait until it gets a little brown on the bottom and then toss the cauliflower with a spatula. Brown a bit more and continue to sauté until the pieces deeply golden brown—about 6 minutes. In the last 30 seconds add the garlic. Remove from heat and stir in the chives, lemon zest, and dust with a bit of Parmesan cheese and a pinch of sea salt.
