OVEN-ROASTED VEGETABLES
Ingredients:
1 med zucchini cut into bite-sized pieces
1 med summer squash, but into bite-sized pieces
1 med red bell pepper, cut into bite-sized pieces
1 med yellow bell pepper, cut into bite-sized pieces
1 lb fresh asparagus, cut into bite-sized pieces
1 red onion, coarsely chopped
3 Tbsp olive oil
1 tsp salt
½ tsp black pepper
Directions: Preheat oven to 450 degrees. Place zucchini, squash, bell peppers, asparagus, and onion in large roasting pan. Toss with oil, salt, pepper to mix and coat. Spread in single layer in pan. Roast 30 minutes, stirring occasionally, until vegetables are lightly browned and tender.
