Onion #4

BAREFOOT CONTESSA’S TURKEY MEATLOAF (MODIFIED FOR LOW CARB)
Ingredients:
3 cups chopped yellow onion
2 Tbsp olive oil
2 tsp kosher salt
1 tsp fresh ground black pepper
½ tsp thyme
1/3 c Worcestershire sauce
¾ c chicken stock
1 ½ tsp tomato paste
5 lbs ground turkey
3 large eggs, beaten
¾ c ketchup (optional)

Directions: Preheat oven to 325 degrees. Saute onions in olive oil until translucent, about 15 minutes. Add salt, pepper, thyme, Worcestershire sauce, chicken stock, and tomato paste. Mix well. Combine ground turkey, egg and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. If using ketchup spread evenly over the top. Bake for 1 ½ hours until internal temperature is 160 degrees.
