Cucumber #3

TZATZIKI (GREEK YOGURT AND CUCUMBER SAUCE)
Ingredients:
3 cups Greek Yogurt
3 Tbsp lemon juice
1 garlic clove, chopped
2 medium cucumbers, seeded and diced
1 Tbsp kosher salt
1 Tbsp finely chopped fresh dill
Black pepper to taste

Directions: Peel cucumbers, then cut in half lengthwise and take a small spoon an d scrape out seeds. Slice cucumbers, then put in a colander, sprinkle on 1 Tbsp salt and let stand for 30 minutes to draw out water. Drain well and wipe dry with paper towel. In food processor add cucumbers, garlic, lemon juice, dill and some black pepper. Process until well blended, then stir this mixture into the yogurt. Taste before adding additional salt and pepper. Place in refrigerator for at least 2 hours before serving so flavors can blend.

Makes: 3 ½ cups, or 14 – ¼ cup servings
