Cucumber #1

FRIED GREEN TOMATOES/CUCUMBERS
Ingredients:
Cucumbers or green tomatoes
1-2 beaten eggs (1 for ½ cucumber or 1 green tomato, 2 for whole cucumber or 2 tomatoes)
Parmesan cheese
2 Tbsp butter
Salt and Pepper to taste

Directions: Melt the butter in a frying pan on medium low. If using cucumbers cut the skins off and then slice 1/8” to ¼” thick, tomatoes to the same thickness. Beat your eggs in one bowl and place another bowl next to it with about ½ cup Parmesan cheese. Place veggies in egg one at a time, cover both sides and then turn in the parmesan cheese coating evenly. Place in hot skillet and sprinkle with salt and pepper. Turn after a few minutes to cook both sides.
