Beets #2

ARUGULA SALAD WITH BEETS AND GOAT CHEESE
Ingredients
6 c fresh arugula: rinsed, patted dry
6 oz Goat cheese (Chevre)
6 oz walnuts chopped
½ c olive oil
Juice of 1 lemon
½ tsp dry mustard
1 ½ tsp Splenda
Salt and pepper to taste

Directions: Assemble the salad: 1 cup arugula, 1/6 of the beet volume, 1 oz cheese and 1 oz walnuts. In a small bowl combine the oil, lemon juice, dry mustard, Splenda, salt and pepper and whisk with a fork. Drizzle desired amount over the salad.
3 beets: boiled until a ford easily goes into it, peeled and sliced into strips
Makes 6 servings.
