Bamboo shoots #1

In light of the challenge that Thanksgiving provides for dieters, here is an additional vegetable recipe to start the week.

SHRIMP WITH BAMBOO SHOOTS
Ingredients
1 pound peeled medium shrimp
1 can bamboo shoots, coarsely chopped
1 medium carrot, coarsely chopped
1 clove garlic, crushed
1 onion, thinly sliced
1 Tbsp, ginger strips
½ c chicken broth
2 Tbsp oyster sauce
1 stalk green onion, cut into 1 inch lengths
2 Tbsp vegetable oil

Directions
Heat oil in a pan and saute’ garlic, onion, and ginger until aromatic. Add shrimps, carrot, bamboo shoots, and broth. Let it boil and cook until shrimps and vegetables are done. Season to taste with salt and pepper. Add oyster sauce and green onion. Cook for 1 minute more.

Makes 4 servings.
