Asparagus #4

STIR FRIED ASPARAGUS
Ingredients
1 lb asparagus
1 ½ c mushrooms, freshly sliced
2 tsp vegetable oil
1 tsp arrowroot
½ chicken or vegetable bouillon cube
Pinch salt
Pinch freshly ground black pepper

Directions
Cut the asparagus spears into one-inch pieces and lightly steam. Mix ½ cup water with the bouillon; reserve. Mix the arrowroot and 1 tsp water: reserve. Heat the oil in a wok or a large frying pan over medium heat. Add the asparagus, mushrooms, salt and pepper; stir fry for about 1 minute. Stir in the bouillon mixture and heat to boiling. Stir in the arrowroot mixture. Cook and stir until thickened (about 15 seconds).

Makes: 2 servings.
