CHEESE AND SPINACH CRUSTLESS QUICHE
Ingredients:
1 onion, chopped
1 package chopped frozen spinach, thawed and squeezed dry
6 eggs
1 Tbsp olive oil
3 c shredded cheddar cheese
Salt and pepper to taste
Directions: In a large skilled, fry the onion in the olive oil and add spinach, cooking until tender. In a large bowl, beat eggs, and add cheese, salt and pepper. Once spinach and onions are ready, add the egg mixture and mix until even. Lightly grease a pie dish. Pour ingredients into pie dish and bake for 30 minutes or until golden brown and firm.
