GREEN BEANS IN MUSTARD SAUCE
Ingredients
2 pounds green beans, trimmed
¼ c distilled white vinegar
3 Tbsp Dijon mustard
2 Tbsp vegetable oil
1 Tbsp lemon juice
¼ tsp pepper
1/8 tsp dried tarragon
1/8 tsp dried basil
Directions: Put beans into a large pot of boiling salted water and boil 5 to 8 minutes, until crisp-tender. Drain. In a large bowl whisk remaining ingredients and ½ tsp salt until well blended. Add drained beans, toss and serve hot.
Makes 8 servings.
